Pear crumble

The perfect finishing touch to any dinner party, this easy crumble comes together quickly, and the pear cider adds the perfect touch of sweetness to the spiced filling. Plus, it can be partially prepped ahead of time.

Ingredients

  • 6 pears, ripe but firm
  • 1 tbsp caster sugar
  • zest of 1 lemon
  • ½ tsp cinnamon
  • 150ml Rochdale Pear Cider

Topping

  • 150g whole rolled oats
  • 100g plain flour
  • 1½ tsp ground cinnamon
  • 1 tsp ground ginger
  • pinch ground cloves
  • 100g butter, diced
  • 100g demerara sugar

Plus custard or ice cream to serve

Directions

Preheat the oven to 190°C, fan 170°C.

For the topping, mix the oats, flour and spices in a large bowl with a good pinch of salt. Cut in the butter to form small clumps, then stir in the sugar and mix until you have a chunky crumble. Set aside*.

Peel and core the pears and cut into bite-sized pieces. Add to a shallow ovenproof dish and toss with the caster sugar, lemon zest and cinnamon. Add the Rochdale Pear Cider.

Scatter the crumble topping over the pear mixture and bake for 35-40 minutes until golden brown. The filling should be bubbling up around the sides.

Let cool for 10-15 minutes before serving with custard or ice cream.

*The crumble topping can be prepared ahead of time and kept chilled until ready to prepare the rest of the dish.
